Chef Andrew Balick’s Salmon Tostone recipe is hands down a crowd favorite. My gals and I absolutely crave this dish. Having Chef Andrew in my kitchen was a treat and stealing this coveted recipe for all of you is icing on the cake.

I am not going to pretend that I’m a Suzie Homemaker, after all I used my oven as shoe storage until last year! But when I do find something I love, I became a creepy evangelist about it. Ala my latest discovery of this low-fat gluten-free quiche. I love normal person quiche, the problem is that it’s usually loaded with a buttery crust (yum) and heavy cream (double yum). However, big girl is on a diet, so I needed to cut back and find healthy alternatives to my favorite dishes.
I found a recipe on Pinterest buuuuttttt I modified that shit because I wanted to make it even healthier (and I love goat cheese).

PUMPKIN + MARUDO PLANTAIN MUFFINS
These Pumpkin + Maduro Plantain Muffins are far from basic! They’re a delicious combination of two classics – pumpkin muffins and delicious ripe plantains. These are perfect for adding a little Miami spice to the very trendy “pumpkin everything” trend.
I love plantains in every way, shape, and form. Fried plantains – yes please! Tostones? Well of course yo soy Puertoriqueña! So it just made sense to add pumpkin to my plantain obsession!
These muffins are so easy and delicious with just the right balance of both flavors, neither one overpowering the other. The ripe plantain keeps these muffins moist and delicious while the pumpkin gives them a beautiful color. Best part is they aren’t overly sweet so you can enjoy during any season.

I love bread stuffing but this meat stuffing is addicting. This is a staple at our family’s table so I thought it would be awesome to share something from my family to yours!
